Wa alaikum salaam warahmatullah,
If you are losing weight to please Allah and take care of your health which is in accordance with Islam while gaining strength at the same time and not getting weaker due to losing weight then there’s no problem in not accepting your mother’s saying, explain her in a kind and loving manner why are you doing so and that you will be healthy and the prophet sallallahu alayhi wassalam and the companions and the salaf would try their best to be healthy and fit. They wouldn’t overeat or binge eat to the point that they harm their health.

But if you are getting weaker by losing weight and not gaining strength rather losing it and your health is getting affected by you losing weight and getting weaker then in this case you should obey your mother if she wants you to eat and be healthy.

What you can do is tell her to make u healthy food so that u can utilize it in building muscles or gaining strength. Change your exercise pattern and calorie intake and nutrient portions, by this you will gain muscles and strength and you won’t be making her worried either.

And Allah knows best
